'Lufthansa: Nonstop you' - but not to my taste!

Lufthansa was for a long time my favourite airline - excellent network (except Latin America), clean and reliable service on a very high standard (rarely truly excellent, but never bad, just consistently pleasant).
But things may have changed. Since a few months their efficiency programme 'SCORE' is running at full speed, and I have the impression you really feel it. This is what I 'enjoyed' during my 12h flight from Rio de Janeiro to Frankfurt in the last days of November:
(i) Starters: Brazilian nuts with Champagne (Jacquart Brut Mosaique, not bad):
(ii) Appetisers: Smoked trout tartare with Papaya (still good):
(iii) Main Course: Brazilian Moqueca with almonds rice:
This is where the first guests around me started to laugh loudly...
(iv) Cheese (with a 2009 Kamptal Zweigelt from Bründlmayer):
The menu said
'goat cheese and Camembert'. This you had to take verbatim as there was one piece each!
I am used to a degradation in quality from starters to the end, but this time I really had the feeling they were serving Economy Class food repackaged for Business. Not impressed!

A few days later I flew
Air France first from Geneva to Paris and then (one day later due to snowfall) from Paris to Vienna. Below is what I was offered during the first 50min flight (with Champagne):

And no, this was
not Business Class, this was Premium Economy!
Well, there are companies that react differently to a similar situation (difficult business environment in the airline industry): Some cut down, some invest. Premium airlines like Lufthansa, Swiss or similar who still operate three-class configurations find it increasingly difficult to convince guests to pay full First Class tickets (most guests there have upgraded against miles or fly on a full miles ticket, thus creating mainly costs).
For the future I think I will concentrate on airlines who do not offer a First Class - my experience says that their Business Classes are far better than what Lufthansa offered here. Austrian Airlines for example has a Chef on board who prepares the meals freshly.
