An excellent source for Fish & Chips

Today is my wife's birthday, and she requested Fish and Chips from Chef John's, in Lemon Grove.
This small town east of San Diego is where I grew up, so each time we go out there I have to relive my formative years (5-15). Junior High school is probably not the high point of anyone's educational experience. I didn't even OWN a watch back then (or shoes, judging from this picture).
John is a Korean guy who trained in London, worked as a big hotel sous chef in Seoul, and landed eventually near San Diego. He's a very serious guy (seldom smiling or small talk) and he runs the kitchen with an iron will. It's spotless all the time - no doubt due to he and his wife doing all the work back there.
We decided to be big spenders, and chose two Fish Combo lunches, with Mrs C taking the fish, calamari and shrimp option.
I went for fish, clams and scallops. Any combo is just $12.99.
They get bonus points for making the tartar and cocktail sauces in-house. The flavor and texture are excellent compared to out-of-the-jar commercial choices.

As usual, the fish was fresh, hot and wonderful. The diver scallops were fantastic - and large - almost the size of a golf ball. I am not kidding - three bites per scallop. The shrimp were excellent too. The calamari and clams took third place in both of our minds.
Here I am applying the Rolex bracelet test to half of my fish fillet. As you can see, it's showing "Little or No Stretch". The best thing is that the food arrived at 1:10 and this shot was taken at 1:27 pm. My fish was still warm and the batter was still crisp. Can you imagine that?
