The Gold Souk in Bur Dubai is also a must visit and there are a couple of used watch stores there.
My favorite place in the UAE is Al Ain, it's also the hometown of the Royal Family of Abu Dhabi, very nice and quiet green oasis and cool museums. It is only an hour away from Dubai, I usually hire a car with a driver for the day. Makes it convenient.

We really didn't go to the malls for shopping. For the most part they are like stores you would find anywhere else in the world. It was mainly to check out the architecture and to see all the unique things like the indoor skiing, the giant aquarium, etc. ...
We went for Thai food.
Remember where the hotel sent us for Thai food, in the mall food court next to KFC. I was mad we were about to have a meal in a mall food court. The meal was made to order and was quite good. Best, JerryW
